Le petit Jesus en Culotte de Velours

When the cheese is well matured, the white immaculate mould has been replace by this sticky orange skin. If the outside is pungeant and can put you off the inside has become creamy like butter, on the side, the skin has cracked open like an explosion of cream bursting out of the buche. The taste of this cheese is what we call in French “Le petit Jesus en Culotte de Velours” literally meaning “Jesus dressed in short pants”

Buche Cheese

As the monkey evolved and became a man so did the Buche, it started fresh light in colour and on the tongue that was the childhood, then it hardened and the white velvety skin grew and covered the whole body the buche became a Teenager, under the effect of heat and humidity it matured and acquired a strong and lingering taste it’s now an adult, then it dried out and became the essence of the milk it was originally. its now and old buche that is so hard it can only be grated.

Who is the Cheese Guru?

Gerald Tanesse is known as the Cheese Guru - He was born in France and moved to South Africa in 1993 - After 10 years of guiding French tourists throughout Southern Africa. He then opened a Guesthouse and became a Dad in 2004 - He stopped travelling and became a Sworn Translator, Interpreter and Voice Artist before running an on-line newspaper for French Expatriates. He started making Cheese in 2010 In Johannesburg and moved to Kommetjie in September 2015. - If you have any questions please contact him at gerald@cheeseguru.co.za.
